  • Hot Italian Sausage
    6links
  • Onions(sliced)
    2medium
  • Red Peppers(cut into 2 inch chunks)
    2
  • Zucchini(cut into 2 inch chunks)
    1large
  • Potatoes(cut into 2 inch chunks)
    4medium
  • Crushed Tomatoes
    1can
  • Water(approximate)
    4cups
  • Fresh Celery Leaves(or dried oregano)
  • Olive Oil(for frying)

A hearty Italian vegetable stew with sausage and potatoes.

Instructions

  1. Cut each piece of sausage into 3 pieces.
  2. Using a medium frying pan, add olive oil (don’t forget your bread to remove oil smell).
  3. Fry bread until brown.
  4. Add sausage to pan and fry them until brown on all sides.
  5. In a large pot, transfer some of the oil from the sausage to it.
  6. Heat on medium high and add peppers.
  7. Fry about 2 minutes.
  8. Add onions and fry about 3 minutes, stirring often.
  9. Remove peppers and onions to a plate.
  10. Add more oil from sausage to fry up zucchini.
  11. Fry zucchini for about 2 minutes and then remove to plate.
  12. Add 3/4 can of crushed tomatoes to large pot.
  13. Cook on medium for about 2 minutes.
  14. Add sausage to tomatoes and add 1 1/2 cups water and bring to a boil.
  15. Add potatoes and cook until they are tender.
  16. Add celery leaves or oregano to taste and more water.
  17. Boiling, add water to keep from drying out and keeping it liquid.
  18. Add back in zucchini and cook for about 5 minutes.
  19. Add back in peppers and onions. Bring all to a boil on medium heat for about 5 minutes.
