Almond Pignoli Nut Cookies

  • Almond Paste
    1lbs
  • Sugar
    2cups
  • Egg Whites
    3
  • Flour
    3tbsp
  • Pignoli Nuts (Pine Nuts)
    1lb

Classic soft almond cookies topped with pine nuts.

Instructions

  1. Preheat oven to 350 degrees.
  2. Line cookie tray with parchment paper.
  3. Break up almond paste and mix with the sugar until mixture is very fine.
  4. Beat egg white until stiff and fold into paste.
  5. Add flour and mix well.
  6. Form 1 1/2 inch balls.
  7. Place nuts in a bowl and roll each ball in the nuts until moderately covered.
  8. Slightly flatten each ball.
  9. Place onto the parchment lined tray.
  10. Bake for 20 minutes until lightly brown.
  11. Let cool before enjoying!
