  • Flour
    8cups
  • Eggs
    2
  • Cold Water(Add in 1/4 cup increments)

Fresh homemade cavatelli pasta.

Instructions

  1. Make a well of flour on a large clean surface.
  2. Add beaten eggs to well.
  3. Add water in 1/4 cup increments.
  4. Knead everything together until dough is soft but not too moist.
  5. Feed the dough into a pasta machine on the #1 setting for 3 times.
  6. Cut dough into 1 inch strips.
  7. Feed strip into cavatelli machine.
  8. Place cavatelli’s into a large pot and boil.
  9. Once boiling, boil for 3 minutes.
  10. Cavatelli’s will be floating when done.
  11. Serve with your favorite sauce and meatballs!
