Ingredients
Lamb
- Leg of Lamb(5-6 lbs)1leg
- Garlic(cut into slivers)8cloves
Marinade
- Garlic(minced)2cloves
- Dijon Mustard1/2cup
- Soy Sauce1tbsp
- Ground Ginger1/2tsp
- Fresh Rosemary(minced)1tsp
- Olive Oil1/4cup

Instructions
- Cut small gashes in lamb surface and insert garlic slivers about 1 1/2 inches apart (Optional: with each gash, add a leaf or two of rosemary).
- In a small bowl, stir together garlic, mustard, soy sauce, ginger, rosemary, and oil: set aside.
- With a brush, completely coat roast with mustard mixture; let stand at room temperature for 1 hour.
- Preheat oven for 325 degrees.
- Bake uncovered for 1 1/2 hours (for rare).
- Remove lamb to a platter; let stand for 10 to 15 minutes.
- Skim fat from pan drippings; reheat drippings and pour into small container.
