Leg of Lamb

Ingredients

Lamb

  • Leg of Lamb(5-6 lbs)
    1leg
  • Garlic(cut into slivers)
    8cloves

Marinade

  • Garlic(minced)
    2cloves
  • Dijon Mustard
    1/2cup
  • Soy Sauce
    1tbsp
  • Ground Ginger
    1/2tsp
  • Fresh Rosemary(minced)
    1tsp
  • Olive Oil
    1/4cup

Roasted leg of lamb with garlic, rosemary, and Dijon mustard.

Instructions

  1. Cut small gashes in lamb surface and insert garlic slivers about 1 1/2 inches apart (Optional: with each gash, add a leaf or two of rosemary).
  2. In a small bowl, stir together garlic, mustard, soy sauce, ginger, rosemary, and oil: set aside.
  3. With a brush, completely coat roast with mustard mixture; let stand at room temperature for 1 hour.
  4. Preheat oven for 325 degrees.
  5. Bake uncovered for 1 1/2 hours (for rare).
  6. Remove lamb to a platter; let stand for 10 to 15 minutes.
  7. Skim fat from pan drippings; reheat drippings and pour into small container.
