Jelly Filled Cookies

Ingredients

Dough

  • Flour
    3cups
  • Baking Powder
    3tsp
  • Salt
    1tsp
  • Eggs
    4
  • Oil
    1/2cup
  • Sugar
    1/2cup
  • Vanilla
    1tsp

Filling

  • Strawberry Preserves(Enough for a thin layer)
    1jar
  • Walnuts(Crushed)
    1/2cup
  • Raisins(Chopped)
    1/2cup

A rolled dough cookie filled with strawberry preserves, walnuts, and raisins.

Instructions

  1. Preheat oven to 325 degrees.
  2. Beat eggs, oil, sugar and vanilla in a bowl.
  3. Sift dry ingredients into a separate bowl.
  4. Pour liquid mixture into dry mixture.
  5. Work mixture into a dough.
  6. Split dough in half.
  7. Roll each piece into a very thin layer, about as thick as a pie crust.
  8. Spread a very thin layer of strawberry preserves on the dough.
  9. Sprinkle raisins and walnuts on dough.
  10. Roll up dough like a log.
  11. Place log on a baking sheet.
  12. Bake for 10 to 15 minutes until light brown.
  13. Once cooled, cut into 1/2 inches pieces and enjoy!
