Chile Rellenos Casserole

Ingredients

Batter

  • Milk
    1 1/2cups
  • Eggs
    4large
  • Buttermilk Baking Mix
    1 1/2cups

Filling

  • Diced Green Chilies(4oz cans, drained)
    2cans
  • Grated Mild Cheddar Cheese(8 oz)
    1package
  • Grated Pepper Jack Cheese(8 oz)
    1package
  • Tomato Sauce(8 oz)
    1can
  • Green Onions(chopped)
    1/3bunch

Layers of green chilies, cheese, and fluffy batter baked until golden.

Instructions

  1. Preheat oven to 375.
  2. In a large bowl combine milk, eggs and baking mix.
  3. Blend until smooth.
  4. In a greased 9x13 pan alternate layers of batter, chilies and cheese.
  5. Ending with batter.
  6. Gently pour tomato sauce evenly over all.
  7. Bake for about one hour or until lightly brown and cooked through.
  8. Remove from oven and sprinkle evenly with green onions.
  9. Return to oven.
  10. Bake for an additional 10 minutes.
