Squash Flowers

  • Squash Flowers (Zucchini Blossoms)
    12whole
  • Eggs
    3
  • Flour
    3 1/2tbsp
  • Baking Soda
    1/8tsp
  • Salt
    2pinches
  • Dried Mint(optional)
    1tsp
  • Olive Oil(for frying)
  • Salt(to taste)

Fried zucchini blossoms in a light batter.

Instructions

  1. Wash flowers. Break off stems and break open end to reveal any bugs.
  2. Break off any hard leaves or stems on outside of flower.
  3. Fully opening up each flower.
  4. In a deep dish, beat eggs.
  5. Add flour, salt and baking soda and mint.
  6. Beating together with wire whisk to make a pancake like batter.
  7. Heat oil about 1/2 inch up pan on medium high heat.
  8. Dip each flour in batter until covered.
  9. Place in heated oil.
  10. Fry on each side until golden brown.
  11. Remove to paper towel to absorb oil.
  12. Sprinkle with salt to taste.
  13. Serve Warm.
